Breakfast Burrito Meal Prep

Ingredients:

  • 600G diced potatoes (about 1.5 lbs)

  •   1 squirt spray oil

  •   1 tsp Italian seasoning

  •   1 tsp onion powder

  •   1 tsp garlic powder

  •   1 tsp chili powder

  •   1.5 tsp smoked paprika

  • 1 onion diced

  •   275g TVP (2.5 cups)

  •   2 TBSP (30ml) Worcestershire sauce

  • 1/3 cup (80g) tomato paste

  • 4 cloves garlic, diced

  • 1000g Just Egg (2 cartons)

  • 2/3 cup Greek yogurt (1 serving of my recipe)

  •   10 low cal/higher protein tortillas

  • pinch of salt

  • pinch of pepper


Instructions:

In a small bowl, add the TVP to 750g of water and set it aside to rehydrate.


In a different bowl, add the potato and a bit of spray oil.  Add the seasonings, mix together and put on a sheet pan with parchment paper.  Air fry 400F for 30 mins flipping half way through.


While the potatoes are cooking, add the diced onion to a skillet on medium heat and saute till translucent.  Add the rehydrated TVP, the Worcestershire sauce and another round of the seasonings that you used for the potatoes.   Stir fry for a few minutes until the tvp is cooked and everything is heated through.  Add the tomato paste, the diced garlic and let it all fully cook.  Remove from heat.


In a small bowl, add the just egg, the yogurt and mix together. Dump the mixture into a non-stick skillet and cook on low to medium mixing it gently every 30 seconds until it looks scrambled.  Add some salt and pepper to taste.


Warm a tortilla and distribute the just egg mixture, the potatoes, the TVP mixture, and top with some sriracha mayo if desired.  Sprinkle with some chives and pull into a burrito.  Put the seam of the burrito face down on a hot skillet and let it seal.  Repeat with the rest of the mixture until you have 10 burritos.


Store the burritos in your freezer, when you’re ready to eat one first start by taking the burrito out the wrapper or foil, wrap it in a slightly damp paper towel & microwave for around 2 minutes (this step thaws the burrito to ensure it isn’t cold in the middle) then air fry at 190C or 375F for approximately 5 - 8 minutes. Times may vary slightly but this last step can also be done in an oven or pan.
