Pancake Ingredients:
3/4 cup oat flour
1 TBSP ground flax-meal
1/2 tsp baking soda
1/2 tsp baking powder
2 scoops (35g) chocolate protein powder
1/2 tsp vanilla extract
1 1/2 cup plant milk
30 semi sweet chocolate chips
Toppings:
5 TBSP PBFit peanut butter powder
A handful of semi sweet chocolate chips
Directions:
Add the dry pancake ingredients to a mixing bowl and whisk well. Add the rest of the pancake ingredients and stir until combined. Let sit for 15 minutes as it will thicken as it sits
Set a non-stick skillet to med heat and cook pancakes about 2-3 minutes on each side until they start to bubble on top. These pancakes are thin and the chocolate chips will stick to the pan so use a bit of spray oil if necessary. This recipe makes two servings so half of the recipe is a single serving
In a separate small bowl, mix the PBFit powder with enough water to create a runny PB sauce (about 6-7 TBSP). Use a whisk to get it all combined. Pour it over the pancakes, top with a few extra chocolate chips and enjoy.
