Ingredients: (From HCH)
3/4 cup Oat Flour
4 TBSP maple syrup
1/4 cup cocoa powder (unsweetened)
1/4 cup oat milk (or other plant milk)
1 tsp vanilla
1/4 tsp sea salt
1/2 tsp baking soda
1 medium cooked sweet potato
3 TBSP dark chocolate chips (or anything without dairy)
Directions:
Preheat oven to 400F. In a mixing bowl add all the ingredients execpt for the potato and chocolate chips. Mix well. Add the potato and mix again. The mix will be very, very think and that is how it is supposed to be. Once the potato is mixed into the batter, add the chips and fold in. Place mix in a small casserole pan and push down the top and sides so it is even. I used parchment paper to stop the brownies from sticking. Cook for 22 mins, test using a toothpick and then remove from oven and let cool for 30 mins. Enjoy!
