Ingredients:
3 TBSP(44ml) Just Egg
1/2 cup (60g) TVP
2 (44g) Field Roast breakfast sausage apple maple
1 cup (30g) baby spinach
3 oz (85g) black beans, drained and rinsed
1/2 cup (35g) broccoli
1 large (100g) tomatoes
1/4 tsp ground black pepper
1/4 tsp chili powder
1/4 tsp ground turmeric
Directions:
In a small bowl, mix the TVP with 1/2 cup water and stir well to combine. Let this sit on the counter for 5 minutes while you get the rest of the ingredients prepped.
In a sauté pan on low-medium heat, add a few tablespoons of water and add the broccoli and tomatoes to the pan to start cooking. After a few minutes when the tomatoes start breaking down, add the TVP and sausage. Let that cooke for a few minutes, adding a few tablespoons of water to the pan as needed. Don’t let the mixture stick to the pan, keep moving it around. After a few minutes, add the spices and the black beans and cook until the beans are heated through.
Make a well in the middle of the pan by moving the scramble to the edges of the pan and add the Just Egg. Let this cook for a few minutes until you see the mixture bubbling. Flip it over with a spatula (it may have to be flipped in pieces) and let it keep cooking. I flipped my over a few times to get it to a scrambled egg mixture. Once the Just Egg is a scrambled consistence, mix all of the ingredients together, remove it from the heat and add in the spinach. Mix well to get the spinach to wilt. Serve hot.
