Instant Pot Bolognese

Ingredients:

  • 1 medium onion, finely diced (300g)

  • 2 carrots, peeled, finely diced (150g)

  • 1 green bell pepper (120g)

  • 150g Organic Textured Vegetable Protein (if doing high protein)

  • 1/2 cup very hot water (almost boiling) (for the TVP)

  • 3 celery stalks, finely diced (110g)

  • 3 garlic cloves, finely chopped

  • 4 tablespoons tomato paste (66g)

  • 1/2 cup red wine vinegar

  • 1 28oz can of whole tomatoes

  • 1 TBSP Italian seasoning (or extra oregano)

  • 1 TBSP dried oregano

  • 2 tsp chili powder

  • 1 TBSP maple syrup

  • 2 tsp sea salt

  • 1 tsp black pepper (or to taste)

  • 2 bay leafs

  • 1 tsp powdered mustard

  • 1 pinch of red chili flakes

  • 1 cup water

  • 4 cups baby spinach chopped


Instructions:

  • Set the Instant Pot to sauté and toss in about a tablespoon of water until it start steaming.  Add in the onion, carrots, green pepper and celery.  Cook until veggies are softened, stirring occasionally, about 5 minutes. While this is happening, put the TVP in a bowl with the water, mix well and let sit.


  • Add the TVP and cook for 3-4 minutes until it starts turning a slight brown. Add the garlic and tomato paste and let cook for a minute until the mixture starts sticking to the bottom.  Add the red wine vinegar and a few tablespoons of water if needed.  Scrape the bottom of the pan with a wooden spoon to get all the flavor mixed in as you deglaze the pan.  Stir together for about a minute and then turn off the instant Pot by hitting the cancel button.

  • Stir in the rest of the ingredients except for the spinach  (canned tomatoes, water and all the spices). Lock the lid in place and set valve to sealing position. Cook on high pressure for 20 minutes. Once it finishes, do a quick release, open the pot and toss in the baby spinach.  Stir it in and put the lid back on the top while the spinach wilts. Taste and adjust seasonings if necessary.  Plate up and serve with your favorite pasta.  Top with some nutritional yeast if desired.

Seems like an awfully long time! One would think 10 minutes would suffice since veggies are finely diced! Anyway, you look great plant based dads!
