Ingredients:
1/2 - 1 tsp veggie broth powder or concentrate
1 tsp soy sauce/vegan fish sauce/salty sauce
1/2 cup mixed veggies (I used corn, carrots, peas, bok choy)
1 cup dry rice noodles or cooked noodles of another type
1/4 chickpeas or other type of protein cooked
1 tbsp scallions, cilantro or other aromatics
Directions:
Add ingredients to mason jar and store in the fridge for up to 5 days. When lunch time comes, open the lid, add boiling water, let the lid loosely back on and let steep for 5-10 minutes. Open and eat right out of the jar or dump into a bowl.
