Ingredients:
1 package (200g) Shirataki Noodles
150G Seitan cut into small bite sized pieces
1 medium (50g) white onion diced
1/2 cup broccoli
1 med red bell pepper
1 large carrot peeled and sliced into coins
Sauce:
2 tsp (10g) Gochujang
2 tsp (10g) Mirin
2 tsp (10g) rice vinegar
2 cloves garlic pressed or minced
1 inch ginger (optional)
.5 tsp (2g) sesame oil
2 TBSP (10-20g) water
pinch of salt
1 tsp black pepper
Instructions:
Drain the noodles into a colander in the sink with cold water running over for a minute. Let is sit in the sink and drain while you do the next step.
Mix the sauce ingredients together in a small bowl and whisk well. Set aside. In a medium pan with med/high heat and some spray oil, add the seitan, salt and pepper and stir fry for 2-3 minutes until it starts to brown. Next, add in the onion, carrots, bell pepper and broccoli and stir for 2-3 minutes until the onions get some color. Remove everything from the skillet and place in a bowl for use later on.
Put the pan back on the cooktop with medium heat and no additional oil. Add in the Shirataki Noodles to the hot pan and cook for 2 minutes until the water is evaporated and the noodles start to get crispy. After 2-3 mins, add back the seitan/onion/stir fry mixture, combine everything and then dump in the sauce mixture. Mix and stirfry for another 1-2 mins until it becomes a fire read noodle dish. Remove from heat and serve. Eat immediately.
