Tofu Veggie Peanut Protein Bowl

Salad Ingredients:

  • 2 cups (178g) red cabbage

  • 1 cup (110g) carrots grated

  • 1 package (340g) fava bean tofu

  • 1 cup (184g) broccoli florrettes

  • 4 cups (188g) romaine lettuce

  • 1 large (186g) yellow bell pepper

  • 1/2 (50g) avocado



Dressing Ingredients:

  •   4 TBSP peanut butter powder

  •   2 TBSP water

  • 2 TBSP lime juice

  •   1/2 tsp (0.9g) red chili flakes

  • 1 TBSP low calorie maple flavored syrup

  •   1 TBSP coco aminos



Instructions:

Whisk dressing ingredients together in a small bowl and set aside.


Cube the tofu and sauté with a quick shot of spray oil, or cook in the airfryer until fully cooked.  We coated it with a citrus rub first.  Add the cooked tofu to a large bowl with all the other salad ingredients and then top with dressing.
